Broccoli and Feta Salad

Another great way of loading veg into your meal. Roasting the broccoli brings out its sweetness and the raisins and vinegar work really well with the feta.

Ingredients

  • 300g broccoli florets, chopped very small
  • 40g pine nuts
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 40g raisins
  • 80g feta, chopped into small cubes
  • 1 tbsp cider vinegar
  • 2 tbsp lemon juice

Directions

  • Preheat oven to 180°C.
  • Add the broccoli, pine nuts, oregano, and oil to a large roasting dish and mix well so the oil coats everything.
  • Season with salt and pepper and pop in the oven for 15 minutes until the broccoli and nuts start to brown.
  • Remove from the oven and transfer into a large bowl.
  • Add all other ingredients and mix well.
  • Serve between 2 plates.
