Carrot Cake Cookies

If you love carrot cake, then these cookies are a must try!!


  • 100g oats
  • 100g gluten-free flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 30g coconut oil, melted
  • 2 medium eggs
  • 1 tsp vanilla paste/essence
  • 80ml maple syrup
  • 70g carrot, peeled and grated
  • 70g raisins


  • Preheat oven to 180°C.
  • Line an oven tray with baking paper.
  • Mix the oats, flour, baking powder, cinnamon, nutmeg, and salt together in a bowl.
  • In a separate bowl, whisk together the oil, eggs, vanilla, and maple syrup.
  • Pour this mixture into the dry ingredients and mix well.
  • Fold in the carrots and raisins and then pop in the fridge to cool for 30 minutes.
  • Spoon out a large tbsp of mixture on the tray and round it with your hands or spatula, flattening it slightly.
  • Repeat until all the mixture is used. This usually makes 14.
  • Bake in the oven for 20 minutes or until nicely golden.
  • Remove from the oven and let them cool on the tray for 10 minutes before transferring to a wire rack.
  • Store in an airtight container.
