Carrot Cake Cookies
If you love carrot cake, then these cookies are a must try!!
Ingredients
- 100g oats
- 100g gluten-free flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 30g coconut oil, melted
- 2 medium eggs
- 1 tsp vanilla paste/essence
- 80ml maple syrup
- 70g carrot, peeled and grated
- 70g raisins
Directions
- Preheat oven to 180°C.
- Line an oven tray with baking paper.
- Mix the oats, flour, baking powder, cinnamon, nutmeg, and salt together in a bowl.
- In a separate bowl, whisk together the oil, eggs, vanilla, and maple syrup.
- Pour this mixture into the dry ingredients and mix well.
- Fold in the carrots and raisins and then pop in the fridge to cool for 30 minutes.
- Spoon out a large tbsp of mixture on the tray and round it with your hands or spatula, flattening it slightly.
- Repeat until all the mixture is used. This usually makes 14.
- Bake in the oven for 20 minutes or until nicely golden.
- Remove from the oven and let them cool on the tray for 10 minutes before transferring to a wire rack.
- Store in an airtight container.
