Carrot Soup

A really easy, simple soup if you like carrots that is! Itโ€™s a cook, blend and done recipe. Give it a whirl.

Ingredients

  • 1 tbsp olive oil
  • 5 large carrots (600g), peeled and chopped
  • 1 red pepper (160g), cored and chopped
  • 30g sun-dried tomatoes
  • 500ml water
  • Handful fresh parsley, chopped
  • Handful fresh thyme, chopped
  • 2 bay leaves

Directions

  • In a large pan, add the oil on high heat and add the carrots and pepper. Stir constantly for 5 minutes.
  • Add all other ingredients and bring to the boil.
  • Once boiling, reduce to a simmer and leave for 15 minutes.
  • Blend everything until nice and smooth.
  • Serve.
