Carrot Soup
A really easy, simple soup if you like carrots that is! Itโs a cook, blend and done recipe. Give it a whirl.
Ingredients
- 1 tbsp olive oil
- 5 large carrots (600g), peeled and chopped
- 1 red pepper (160g), cored and chopped
- 30g sun-dried tomatoes
- 500ml water
- Handful fresh parsley, chopped
- Handful fresh thyme, chopped
- 2 bay leaves
Directions
- In a large pan, add the oil on high heat and add the carrots and pepper. Stir constantly for 5 minutes.
- Add all other ingredients and bring to the boil.
- Once boiling, reduce to a simmer and leave for 15 minutes.
- Blend everything until nice and smooth.
