Cauliflower chocolate pudding
You may be thinking that this sounds mad, but honestly you would have no idea this uses cauliflower as there’s no cauliflower smell at all when it’s finished. A great wayof hiding vegetables from kids too!
Ingredients
- 450g cauliflower florets
- 6 tbsp cacao powder
- 5 tbsp maple syrup (100g)
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla essence/paste
- Pinch of salt
Directions
- Cook the cauliflower in a pan of boiling water until soft, around 15 minutes.
- Drain and pop into a blender/food processor and blend until smooth.
- Add all other ingredients and blend well until mixed.
- Serve into pots.
- You can eat this hot or cold.
