Celeriac Burgers
A lovely veggie burger which is baked in the oven, not griddled. This is due to the mixture being quite wet.
Ingredients
- 400g celeriac, chopped into small cubes
- 2 cans cannellini beans, drained and rinsed
- 1 red pepper (170g), chopped
- 100g oats
- Small bunch fresh parsley
- 3 garlic cloves, finely chopped
- 1 tsp onion powder/granules
- 1 tsp paprika
- 1.5 tsp fajita seasoning
- 1 tbsp olive oil
Directions
- Preheat oven to 200°C.
- Boil the celeriac in a pan of water for 10-20 minutes, until a knife easily cuts through a cube. Strain.
- In a food processor, add the beans, red pepper, 50g oats, parsley, garlic, onion powder, paprika, fajita seasoning, olive oil, and cooked celeriac. Process until smooth or small chunks. Mix in the remaining oats by hand.
- Place some baking paper on a baking tray and then lay out the mixture in 12 portions. It may seem quite sloppy but it will bake them fine. Shape the burgers so they are round and evenly thick.
- Bake in the oven for 25 minutes, then turn them over and bake for another 15 minutes.
- Serve with salad.
