Chicken and Bacon Soup

A really simple soup recipe. Might not look much but itโ€™s actually full of flavour from using the bacon and fresh thyme. Feeling run down, this is a must have.

Ingredients

  • 1 tbsp olive oil
  • 6 spring onions, chopped
  • 3 rashers bacon, chopped
  • 200g chicken, diced
  • 5 sprigs fresh thyme, chopped
  • 500ml vegetable stock or just water
  • 1 carrot, peeled and chopped
  • 110g spring greens, chopped

Directions

  • In a large pan on high heat, place in the oil, spring onions, bacon, and chicken and stir constantly until the chicken browns.
  • Add in all the other ingredients except the spring greens and bring to the boil.
  • Turn heat down to a simmer and cook for a further 20 minutes or until the chicken is cooked through.
  • Add the spring greens at the end and cook for 3 minutes until it has softened slightly. Serve.
