Chicken and Bacon Soup
A really simple soup recipe. Might not look much but itโs actually full of flavour from using the bacon and fresh thyme. Feeling run down, this is a must have.
Ingredients
- 1 tbsp olive oil
- 6 spring onions, chopped
- 3 rashers bacon, chopped
- 200g chicken, diced
- 5 sprigs fresh thyme, chopped
- 500ml vegetable stock or just water
- 1 carrot, peeled and chopped
- 110g spring greens, chopped
Directions
- In a large pan on high heat, place in the oil, spring onions, bacon, and chicken and stir constantly until the chicken browns.
- Add in all the other ingredients except the spring greens and bring to the boil.
- Turn heat down to a simmer and cook for a further 20 minutes or until the chicken is cooked through.
- Add the spring greens at the end and cook for 3 minutes until it has softened slightly. Serve.
