Chicken and Pomegranate Salad

Really quick salad you can whip together. Cook a whole chicken at the start of the week and pull it all apart. You’ll then have the meat to throw into salads for a few quick meals.

Ingredients

  • 120g cooked chicken, chopped
  • 40g spinach
  • 70g grated carrot
  • 70g grated cucumber
  • 40g pomegranate seeds
  • 20g grated cheese
  • 1 tbsp mayonnaise

Directions

  • Throw all ingredients into a bowl and season with salt and pepper. Give it a good mix around and then serve.
