Chicken and Pomegranate Salad
Really quick salad you can whip together. Cook a whole chicken at the start of the week and pull it all apart. You’ll then have the meat to throw into salads for a few quick meals.
Ingredients
- 120g cooked chicken, chopped
- 40g spinach
- 70g grated carrot
- 70g grated cucumber
- 40g pomegranate seeds
- 20g grated cheese
- 1 tbsp mayonnaise
Directions
- Throw all ingredients into a bowl and season with salt and pepper. Give it a good mix around and then serve.
