Chicken Filled Mushrooms

Simple meal with a few ingredients. Can work great as a starter too if you only serve 1 mushroom per person.


  • 4 large Portobello mushrooms, stems removed
  • 1 tbsp olive oil
  • 280g chicken mince or breast, chopped into tiny chunks
  • 1 red onion, chopped
  • 1 garlic clove, minced
  • Handful of fresh parsley, chopped
  • 4 sprigs of fresh thyme, leaves only, chopped
  • 100g kale
  • Juice from 1/2 lemon


  • Preheat the oven to 220°C.
  • In a frying pan, add the oil, chicken, onion, garlic, parsley, and thyme. Stir everything together and cook for a good 10 minutes, or until the chicken is cooked.
  • Place the mushrooms in a roasting pan and evenly place the chicken mixture on each mushroom. Bake on the top shelf in the oven for 10 minutes.
  • Using the same frying pan, not cleaned, add the kale and lemon juice and cook on high heat for 2 minutes.
  • Serve the kale onto a plate and add the mushrooms on top. Season to taste. Serve hot.
