Chicken Filled Mushrooms
Simple meal with a few ingredients. Can work great as a starter too if you only serve 1 mushroom per person.
Ingredients
- 4 large Portobello mushrooms, stems removed
- 1 tbsp olive oil
- 280g chicken mince or breast, chopped into tiny chunks
- 1 red onion, chopped
- 1 garlic clove, minced
- Handful of fresh parsley, chopped
- 4 sprigs of fresh thyme, leaves only, chopped
- 100g kale
- Juice from 1/2 lemon
Directions
- Preheat the oven to 220°C.
- In a frying pan, add the oil, chicken, onion, garlic, parsley, and thyme. Stir everything together and cook for a good 10 minutes, or until the chicken is cooked.
- Place the mushrooms in a roasting pan and evenly place the chicken mixture on each mushroom. Bake on the top shelf in the oven for 10 minutes.
- Using the same frying pan, not cleaned, add the kale and lemon juice and cook on high heat for 2 minutes.
- Serve the kale onto a plate and add the mushrooms on top. Season to taste. Serve hot.
