Chickpea Cookies

A great cookie that tastes great. You can use a variety of beans to make these. They also work really well with Cannellinibeans. You can also add in different things instead of dark choc chips, like milk/white chocolate or dried fruit and nuts.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 80g oat flour (grind your oats down into flour)
  • 2 tbsp coconut oil at room temperature
  • 1 tbsp vanilla essence
  • 1/4 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 1 tsp apple cider vinegar
  • 5 tbsp maple syrup/honey
  • 40g dark chocolate chips

Directions

  • Preheat oven to 180°C and line a baking tray with baking paper.
  • Place all ingredients except the chocolate chips into a food processor and combine until smooth. Stir in the chips.
  • Pick up a heaped tablespoon of mixture per cookie and place on the sheet, then using fingers, smooth them into rough circles and press down until 1/2-1 cm thick.
  • Bake in the oven for around 20 minutes or until the edges brown and the tops have cracked a little.
  • Leave to cool on a cooling rack.
