Chickpea Salad

This salad can be made in 5 minutes. The dressing is punchy and the chickpeas add a nice texture. Great as a main or a side salad.


  • 400g can chickpeas, drained, rinsed, slightly bashed
  • Handful coriander, chopped
  • Handful parsley, chopped
  • 1 stick celery, chopped
  • 1/2 red onion, thinly sliced
  • 2 large tomatoes, chopped
  • 40g rocket
  • 1 tbsp olive oil
  • 2 tbsp harissa
  • 1 lemon, juiced


  • In a large bowl add the chickpeas, coriander, parsley, celery, onion, tomatoes, and rocket.
  • Mix the oil, harissa, and lemon juice together in a small pot then add to the salad and mix well. Serve.
