Chickpea Salad
This salad can be made in 5 minutes. The dressing is punchy and the chickpeas add a nice texture. Great as a main or a side salad.
Ingredients
- 400g can chickpeas, drained, rinsed, slightly bashed
- Handful coriander, chopped
- Handful parsley, chopped
- 1 stick celery, chopped
- 1/2 red onion, thinly sliced
- 2 large tomatoes, chopped
- 40g rocket
- 1 tbsp olive oil
- 2 tbsp harissa
- 1 lemon, juiced
Directions
- In a large bowl add the chickpeas, coriander, parsley, celery, onion, tomatoes, and rocket.
- Mix the oil, harissa, and lemon juice together in a small pot then add to the salad and mix well. Serve.
