Crab and Sweetcorn Chowder
A delicious soup which is creamy and simple to make. Would work using a range of different fish or seafood too, but the crab provides a delicate flavour.
Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 leeks, sliced
- 3 garlic cloves, minced
- 2 medium carrots, peeled and chopped
- 1 litre water with 4 tsp bouillon powder
- 350g white potato, peeled and diced
- 200g sweetcorn
- 200g white crab meat
- 4 tbsp cream
- 2 tsp chopped chives
Directions
- Add the oil, onion, leek and garlic to a pan on medium heat. Cook until the veg starts to soften.
- Add the carrots, water, bouillon powder and potato, and bring to the boil. Reduce the heat and simmer for 15 minutes or until the potato is tender.
- Add the sweetcorn, crab and cream and heat for 4-6 minutes until all ingredients are hot.
- Serve and sprinkle chives on top.
