Crab and Sweetcorn Chowder

A delicious soup which is creamy and simple to make. Would work using a range of different fish or seafood too, but the crab provides a delicate flavour.


  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 leeks, sliced
  • 3 garlic cloves, minced
  • 2 medium carrots, peeled and chopped
  • 1 litre water with 4 tsp bouillon powder
  • 350g white potato, peeled and diced
  • 200g sweetcorn
  • 200g white crab meat
  • 4 tbsp cream
  • 2 tsp chopped chives


  • Add the oil, onion, leek and garlic to a pan on medium heat. Cook until the veg starts to soften.
  • Add the carrots, water, bouillon powder and potato, and bring to the boil. Reduce the heat and simmer for 15 minutes or until the potato is tender.
  • Add the sweetcorn, crab and cream and heat for 4-6 minutes until all ingredients are hot.
  • Serve and sprinkle chives on top.
