Dairy Free Simple Custard

You can’t beat a good custard. This is really simple and easy to whip together if you have surprise guests.

Ingredients

  • 300ml coconut milk
  • 1 tsp vanilla bean paste
  • 2 egg yolks
  • 2 tsp arrowroot
  • 4 tbsp (80ml) maple syrup

Directions

  • Heat the coconut milk in a small saucepan and add the vanilla bean paste. Heat until it begins to boil then take off the heat.
  • In a bowl, mix together the yolks, arrowroot, and maple syrup then gradually mix in the milk a little at a time.
  • Once all the milk is mixed in, add the mixture back into the pan and heat until it thickens.
  • Serve.
