Egg Muffins

These are a great batch cook recipe and can be eaten hot or cold. Easily adapted to vegetarian by just taking out the mince and you can use any veg you like. Also try adding a little of your favourite herbs.

Ingredients

  • 75g beef mince
  • 3 free-range eggs
  • 65g red onion, finely chopped
  • 100g red pepper, finely chopped
  • 1 tsp olive oil

Directions

  • Preheat the oven to 180°C.
  • In a frying pan, cook the beef mince until cooked (around 10 minutes).
  • Beat the eggs together in a bowl and add the mince, onion, and pepper. Season with salt and pepper, and mix well.
  • Grease some muffin tins with the oil and then pour the mixture into each muffin tin.
  • Bake in the oven for 20 minutes or continue cooking until a knife comes out clean when placed through the middle.
  • You can double, triple, or quadruple this recipe to batch cook.
