Flaxseed Buns with egg and cress

This recipe makes 4 buns in total (2 per person). Fancying a bread roll? Then you must try these flax seed buns! Really simple to make and only take 20 minutes to cook! No proving required.

Ingredients

  • 80g ground flaxseeds
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp rock salt
  • Pinch black pepper
  • 1/2 tsp mixed herbs
  • 2 medium eggs, beaten
  • 1 tsp maple syrup
  • 1.5 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp water
  • 4 medium eggs for the filling
  • 4 small handfuls of watercress

Directions

  • Preheat oven to 180ยฐC.
  • In a large bowl, mix together the flaxseed, bicarb, salt, pepper, and mixed herbs.
  • Add the beaten eggs, maple syrup, vinegar, oil, and water, and mix well. Leave to thicken for 5 minutes.
  • Take 4-5 tbsp of batter and shape into a bun in your hands. If the mixture is quite wet, donโ€™t worry.
  • Place each bun on the prepared baking tray, leaving a good space between them all. It should make 4 buns. You want the buns around 1 cm thick, so you can gently press on them if you need to shape them smaller.
  • Bake in the oven for 20 minutes or until a knife comes out clean.
  • While they are cooking, boil your eggs for 10 minutes. Then peel and slice.
  • Remove the buns from the oven when ready and leave to cool on a wire rack.
  • Slice and fill with 1 sliced egg per bun and a handful of watercress. Enjoy!
