Green Veg Potato Patties
Really simple patties that are easy to cook and great with dips! This batch usually makes around 12 patties, depending on size.
Ingredients
- 110g finely chopped greens, use anything of the following and a mix if you like, spinach, cabbage, kale, chard
- 320g potato, grated
- 70g onion, finely chopped
- 3 garlic cloves, minced
- Small bunch parsley, finely chopped
- 4 tbsp gluten-free flour
- 4 medium eggs, beaten
- 2 tbsp olive oil
Directions
- Mix together the greens, potato, onion, garlic, parsley, and flour in a large bowl.
- Add the egg and mix well.
- Pop a frying pan on medium heat and add a little oil.
- Place about 2 tbsp of the mixture in the pan, flatten the top with your hand or spatula, and shape it round. Do as many as will fit in the pan.
- Cook for around 6 minutes, then flip and do the same on the other side. You want both sides to be a nice golden color.
- Repeat this process until all the mixture is used.
- Serve and season with salt and pepper.
