Grilled Chicken Salad

If you fancy a jam packed salad then this is the one. Lots of seasonal goodies and some lovely plain grilled chicken. The dressing is really tasty and gives it all a nice sweet taste.


  • 1 tbsp balsamic vinegar
  • 1 tsp wholegrain mustard
  • 1 tsp honey
  • 2 spring onions, thinly sliced
  • 1 tbsp olive oil
  • 2 chicken breasts (130g per breast)
  • 2 medium tomatoes (260g), sliced
  • 1 red onion, top & bottom removed, sliced once through the middle and then the layers taken apart
  • 1 gem lettuce, sliced
  • 20g rocket
  • 160g sweetcorn
  • 120g cucumber, thinly sliced
  • 60g cherry tomatoes, halved
  • ½ avocado, cut into thin wedges
  • Handful small basil leaves


  • In a small pot mix together the balsamic vinegar, mustard, honey, and spring onions and then gradually mix in the oil.
  • Preheat grill or BBQ to high heat. Season chicken breast and sliced tomatoes with salt and pepper and place these and the red onion under the grill. Cook until the chicken is cooked through.
  • Add the lettuce, rocket, sweetcorn, cucumber, cherry tomatoes, and avocado to 2 plates. Display any way you like.
  • Pour over the dressing.
  • Slice the chicken and lay on top. Scatter basil leaves over.
