Halibut Burgers
A great fish burger recipe you can use under your grill or for a BBQ, just remember to make these in advance as they need to set in the fridge.
Ingredients
- 400g halibut
- 2 tbsp olive oil
- 1 egg, beaten
- 1 tsp paprika
- 1 tsp onion powder
- Bunch fresh parsley, chopped
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- ½ onion, finely chopped
- 4 garlic cloves, finely chopped
- 60g ground up oats
Directions
- Ask your fishmonger to slice off the skin of the halibut and prepare it for burgers. If not, slice the skin off yourself carefully using a sharp knife and finely chop the meat.
- Add everything except the oat flour into a bowl and mix well.
- Separate into 4 piles and roll each into a ball and press to make flat.
- Coat each burger on both sides in oat flour.
- Pop some baking paper on a flat plate and place the burgers on top, then set in the fridge for a minimum of 1 hour or overnight.
- To cook, you can either use a skillet and cook for a few minutes on high heat on each side until the center feels firm and cooked through. Or cook on a BBQ or under a hot grill.
- Serve with a salad or in a bun with your favorite vegetables. Goes great with tartar sauce.
