Halloumi Salad
A lovely fresh salad full of herbs which is great for summer. Cook your halloumi under a grill or on a BBQ.
Ingredients
- 200g cooked quinoa
- 240g tomatoes, chopped
- 180g cucumber, chopped
- 4 spring onions, chopped
- 1.5 tbsp fresh parsley, finely chopped
- 1.5 tbsp fresh mint, finely chopped
- 1 tbsp fresh dill, finely chopped
- 1 tbsp olive oil
- Juice from 1/2 lemon
- 1 garlic clove, finely chopped
- 180g light halloumi, sliced
Directions
- In a bowl, mix together the quinoa, tomatoes, cucumber, spring onions, and fresh herbs.
- In a small pot, mix together the olive oil, lemon, and garlic and then pour onto the quinoa mix and stir well.
- Cook the halloumi under a hot grill or on a BBQ for a few minutes on each side until slightly golden.
- Serve the salad up and place the halloumi on top.
