Halloumi Salad

A lovely fresh salad full of herbs which is great for summer. Cook your halloumi under a grill or on a BBQ.


  • 200g cooked quinoa
  • 240g tomatoes, chopped
  • 180g cucumber, chopped
  • 4 spring onions, chopped
  • 1.5 tbsp fresh parsley, finely chopped
  • 1.5 tbsp fresh mint, finely chopped
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp olive oil
  • Juice from 1/2 lemon
  • 1 garlic clove, finely chopped
  • 180g light halloumi, sliced


  • In a bowl, mix together the quinoa, tomatoes, cucumber, spring onions, and fresh herbs.
  • In a small pot, mix together the olive oil, lemon, and garlic and then pour onto the quinoa mix and stir well.
  • Cook the halloumi under a hot grill or on a BBQ for a few minutes on each side until slightly golden.
  • Serve the salad up and place the halloumi on top.
