Kippers, Eggs and Tomatoes on toast

Millet bread might not be your usual choice, but it is a lovely gluten and wheat free bread that is really nice toasted with a great crunch and texture. Goes great withfish.


  • 4 slices millet bread
  • 20 cherry tomatoes, on the vine
  • 2 small kipper fillets
  • 1/2 tsp olive oil
  • 2 eggs, beaten


  • Toast the millet bread.
  • Pop the cherry tomatoes and kippers under a hot grill for 5-10 minutes.
  • Add the oil and eggs in a frying pan on high heat and scramble until all is set.
  • Serve the egg onto the toast, lay a kipper over each portion, and top with the tomatoes.
  • Season with salt and pepper.
