Kippers, Eggs and Tomatoes on toast
Millet bread might not be your usual choice, but it is a lovely gluten and wheat free bread that is really nice toasted with a great crunch and texture. Goes great withfish.
Ingredients
- 4 slices millet bread
- 20 cherry tomatoes, on the vine
- 2 small kipper fillets
- 1/2 tsp olive oil
- 2 eggs, beaten
Directions
- Toast the millet bread.
- Pop the cherry tomatoes and kippers under a hot grill for 5-10 minutes.
- Add the oil and eggs in a frying pan on high heat and scramble until all is set.
- Serve the egg onto the toast, lay a kipper over each portion, and top with the tomatoes.
- Season with salt and pepper.
