Lamb skewers with BBQ veg

A great recipe for a hot summers BBQ. The lamb goes very tender after being soaked in the marinade and goes really well with a garlic mayo dip. Feel free to use any veg on the BBQ to go with it, like peppers, asparagus, tomatoes etc.

Ingredients

  • Marinade:
    • 250g plain yogurt
    • 1 tsp lemon zest
    • Juice from 2 lemons
    • 2 tbsp olive oil
    • 20g mint leaves
    • 40g fresh coriander
    • 6 cloves garlic
    • 1 tsp salt
    • 1 tbsp sweet paprika
    • 1/4 tsp cayenne pepper
  • Ingredients:
    • 520g lamb, chopped into large chunks (shoulder works well)
    • 1 red onion, quartered
    • 1 large green pepper, chopped
    • 3 courgettes, sliced
    • 1 tsp olive oil
    • 3 cloves garlic, crushed
    • 4 corn on the cobs

Directions

  • Make the marinade by blending all ingredients together and then pour into a container and add the lamb and mix well. Pop a lid on and let it marinade for 4-8 hours or overnight.
  • Get some BBQ skewers and alternate by putting on a piece of meat, then a slice of onion, then some meat, then some pepper and repeat until all ingredients are used.
  • Pop the courgette in a bowl with the oil and garlic and mix well.
  • Pop your skewers on the BBQ along with the sweetcorn and keep turning until all sides have browned. Do this until all sides have been coloured.
  • Cook the courgette on the BBQ for less time, up to 8 minutes, turning once so both sides have a little colour.
  • Serve. This goes great with a rice side too.
