Mackerel, Broccoli and Orange Salad
The orange and the mackerel go so well together in this recipe. Itโs sweet and punchy. You can use any mustard you have in the fridge for the dressing. Really nice for a hot summer's day.
Ingredients
- 3 mackerel fillets (240g)
- 200g broccoli, chopped into small florets
- 2 tbsp cider vinegar
- 1 orange, 1/2 segmented and chopped, the other half for juice
- 1 tsp wholegrain mustard
- 6 radishes, sliced
- 20g sprouted seeds (cress, alfalfa, broccoli etc)
- 60g spinach
Directions
- Cook the mackerel under a hot grill for 10 minutes or until cooked through. Set aside.
- Boil the broccoli for 2 minutes in a pan of boiling water, drain and set aside.
- In a large bowl, add the vinegar, the juice from 1/2 orange, the mustard, and season with salt and pepper. Mix well.
- Add the broccoli, radishes, sprouts, and spinach. Stir everything.
- Serve onto 2 plates and top with orange segments.
- Pull apart the fish fillets and divide the meat between the 2 plates.
