Mexican Sweetcorn salad
A really yummy summer salad that is great by itself, or is perfect for a big BBQ as a side.
Ingredients
- 650g sweetcorn
- 1 small red onion, finely chopped
- 2 pickled jalapenos, finely chopped
- 200g cherry tomatoes, quartered
- Small bunch fresh coriander, finely chopped
- 70g vegan mayo
- 4 tbsp fresh lime juice
- 1 tsp onion granules
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/2 tsp paprika

- Add all ingredients to a bowl and mix well.
