Pea and Mint Soup
A really simple and great soup for spring as the mint brings so much freshness.
Ingredients
- 1 tbsp olive oil
- 50g spring onion, chopped (& some extra for garnish)
- 350g potato, peeled and chopped into small chunks
- 1 litre of boiling water with 4 tsp bouillon powder (or 1 ltr veg stock)
- 900g petit pois fresh/frozen
- Small bunch of mint, leaves only
- Juice from half a lemon
Directions
- Add the oil and spring onion to a large saucepan and stir on medium/high heat for a few minutes.
- Add the potato and stock and bring to the boil. Reduce to a simmer and cook for 10 minutes until the potato is tender.
- Add the peas and bring back to the boil.
- Once boiling, turn the heat off and add the mint and lemon juice. Season well with salt and pepper.
- Use a hand blender and blend the soup until smooth or slightly smooth, however you like it.
- To serve, season with a few spring onions and mint leaves.
