Pea Pasta and Tofu
A super easy and simple meal. The pea pasta and tofu enables you to have a decent amount of protein in this meal.
Ingredients
- 250g pea pasta
- 400g mixed frozen vegetables
- 450g tofu, chopped into cubes
- 160g vegan basil pesto
Directions
- Cook the pea pasta as recommended on the pack – usually boil in water for 9-10 minutes.
- Cook this with the frozen veg at the same time in the same pan.
- Once cooked, drain, add the tofu and pesto and season with salt and pepper and mix.
