Pea Pasta with Spinach and Feta

A really simple meal. Pea pasta is great as there is only one ingredient. Peas! It’s texture is the same as usual pasta. To save time, you can also use a shop bought pesto. There are some great vegetarian and vegan options now.

Ingredients

  • 20g walnuts, chopped
  • 10g pine nuts
  • 200g pea pasta
  • 2 small garlic cloves
  • 1/4 tsp nutmeg
  • Zest of 1/2 lemon
  • Juice from 1/2 lemon
  • 200g spinach
  • 30g basil
  • 2 tbsp olive oil
  • 10 cherry tomatoes, halved
  • 60g feta, chopped

Directions

  • Toast the walnuts and pine nuts in a dry frying pan on high heat for a few minutes, stirring constantly until golden.
  • Cook the pasta as per the instructions.
  • While that’s cooking, make the pesto. Pop the toasted nuts, garlic, nutmeg, lemon zest, lemon juice, spinach, basil, and oil in a blender and blend until smooth.
  • When the pasta is cooked, drain and pop back into the empty pan, adding the pesto along with the tomatoes and mix well.
  • Serve into 2 bowls and top with feta.
