Peach Lemonade

A really fresh summers drink. Add more maple syrup if you prefer it a little sweeter.

Ingredients

  • 2 peaches, chopped
  • 500ml water
  • 3 tbsp maple syrup
  • 150ml fresh lemon juice

Directions

  • Pop the peaches, water, and maple syrup in a pan and bring to the boil.
  • Turn the heat down and simmer for 8 minutes.
  • Strain this into a jug and mash the peaches through the sieve, leaving the skins behind which you can bin.
  • Allow to cool and mix in the lemon juice.
  • Serve over ice with lemon slices and fresh mint.
