Poached Eggs and Wild Salmon
A simple breakfast that’s low on the carbs. Try with any greens you like, for example rocket or watercress.
Ingredients
- 2 medium eggs
- 1 tbsp cider vinegar
- 30g spinach
- 60g smoked wild salmon
- 1 tsp olive oil
- Sprinkle of chili flakes
Directions
- In a deep frying pan, fill with water until it’s 2-3 inches deep.
- Add the cider vinegar and bring to the boil.
- Drop the eggs in for 4 minutes and then remove.
- While the eggs cook, pop the spinach and salmon onto a plate and sprinkle over the olive oil.
- Pop the eggs on top once done and season with salt and pepper and sprinkle over the chili flakes.
