Poached Eggs and Wild Salmon

A simple breakfast that’s low on the carbs. Try with any greens you like, for example rocket or watercress.

Ingredients

  • 2 medium eggs
  • 1 tbsp cider vinegar
  • 30g spinach
  • 60g smoked wild salmon
  • 1 tsp olive oil
  • Sprinkle of chili flakes

Directions

  • In a deep frying pan, fill with water until it’s 2-3 inches deep.
  • Add the cider vinegar and bring to the boil.
  • Drop the eggs in for 4 minutes and then remove.
  • While the eggs cook, pop the spinach and salmon onto a plate and sprinkle over the olive oil.
  • Pop the eggs on top once done and season with salt and pepper and sprinkle over the chili flakes.
