Pork Poke Bowl
It's great having things to choose from on a plate so this is a great meal. This uses Fajita spices on the pork, but you can use any of your favourite spices to season this.
Ingredients
- 70g brown basmati rice
- 200g pork loin
- 1 tsp olive oil
- 1 tsp fajita spice
- 140g fresh pineapple, sliced
- 120g tomato, sliced
- 1 red onion, skin removed, quartered
- Juice from 2 limes
- Handful coriander leaves, chopped
- 80g avocado, sliced
Directions
- Place the rice in a pan and cover with plenty of water and a pinch of salt. Bring to the boil and then simmer for 20 minutes, or until the rice is soft. Drain.
- Pat the pork loin dry and then rub over the olive oil, season with salt and pepper, and rub on the fajita spices. Cook under a hot grill or on a BBQ, turning a couple of times throughout. Cook for around 12 minutes on a hot temperature. Once cooked, leave to rest for 5 minutes, then slice.
- When there’s 5 minutes to go, pop the pineapple, tomatoes, and onion under the grill for a few minutes then turn and cook a little more.
- Mix together the lime juice and coriander.
- Serve the rice between 2 bowls and top each with pork slices, pineapple, tomato, onion, and avocado. Drizzle over the lime and coriander mix.
