Prawn Omelette
This tasty, quick and simple omelette is a great recipe to try if you have not tried prawns for breakfast.
Ingredients
- 1 tsp olive oil
- 1/2 small onion, sliced
- 170g tomatoes, chopped
- 80g kale, chopped
- 200g cooked king prawns
- 6 medium eggs, beaten
- 2 tbsp freshly chopped parsley
Directions
- In a deep frying pan, add the oil and onion and cook on high heat for a few minutes.
- Add the tomatoes and kale, and cook for 4 minutes.
- Add the prawns and cook until the prawns are hot (a few more minutes).
- Mix the parsley into the beaten eggs and season with salt and pepper.
- Pour into the pan and spread around until everything is mixed with egg.
- Turn the heat to medium and place on a lid and cook until the top is set.
- Serve.
