Prawn Omelette

This tasty, quick and simple omelette is a great recipe to try if you have not tried prawns for breakfast.


  • 1 tsp olive oil
  • 1/2 small onion, sliced
  • 170g tomatoes, chopped
  • 80g kale, chopped
  • 200g cooked king prawns
  • 6 medium eggs, beaten
  • 2 tbsp freshly chopped parsley


  • In a deep frying pan, add the oil and onion and cook on high heat for a few minutes.
  • Add the tomatoes and kale, and cook for 4 minutes.
  • Add the prawns and cook until the prawns are hot (a few more minutes).
  • Mix the parsley into the beaten eggs and season with salt and pepper.
  • Pour into the pan and spread around until everything is mixed with egg.
  • Turn the heat to medium and place on a lid and cook until the top is set.
  • Serve.
