Prawn Rice Paper Rolls
Really fun to make and super simple as thereโs no cooking involved! Goes great with either sweet chilli sauce or hoisin sauce for dipping in.
Ingredients
- 60g spring onion, sliced lengthways
- 120g red pepper, cut into matchsticks
- 150g carrots, peeled and cut into matchsticks
- 3 tbsp mirin rice wine
- 6 rice paper rolls
- Small bunch of fresh coriander or mint
- 150g cooked king prawns
- 4 tbsp sweet chilli sauce
Directions
- Pop the veg into a bowl and cover with the mirin, and season with salt and pepper.
- Boil a kettle full of water and pour into a deep bowl.
- To make a roll, dip the rice paper in the water for 10 seconds and then pop onto the side.
- Put either a few coriander or mint leaves down the middle first and lay on 3 to 4 prawns in a line.
- Put on an even amount of the veg.
- Fold one side over the fillings, and fold over the top and bottom, then pinch and roll over the remaining side to make a parcel. It may take a few attempts to get them perfect!
- Keep going until all the rice paper rolls, veg, and prawns are used.
- Serve with a side of sweet chilli to dip them in.
