Quinoa Cashew Salad

It’s sweet and crunchy and goes great as a side for a BBQ.


  • 30g cashew nuts
  • 250g cooked quinoa
  • 2 spring onions
  • 2 chopped peppers, mix of colors
  • 1 tsp fresh chopped chili
  • Half bunch fresh parsley chopped


  • 1 clove garlic, peeled
  • 1 tsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 spring onion


  • In a dry frying pan on medium/high heat, add the cashew nuts and toast in the pan until they start to brown and become very fragrant (around 10 minutes).
  • Add to a large bowl and add all other ingredients (except dressing ingredients) and mix.
  • To make the dressing, place all dressing ingredients into a NutriBullet/food processor and blend until smooth.
  • Add dressing to the salad and mix well. Serve.
