Quinoa Cashew Salad
It’s sweet and crunchy and goes great as a side for a BBQ.
Ingredients
- 30g cashew nuts
- 250g cooked quinoa
- 2 spring onions
- 2 chopped peppers, mix of colors
- 1 tsp fresh chopped chili
- Half bunch fresh parsley chopped
DRESSING
- 1 clove garlic, peeled
- 1 tsp Dijon mustard
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tsp honey
- 1 spring onion
Directions
- In a dry frying pan on medium/high heat, add the cashew nuts and toast in the pan until they start to brown and become very fragrant (around 10 minutes).
- Add to a large bowl and add all other ingredients (except dressing ingredients) and mix.
- To make the dressing, place all dressing ingredients into a NutriBullet/food processor and blend until smooth.
- Add dressing to the salad and mix well. Serve.
