Quinoa Pancakes

Quinoa Pancakes? Yes, theyโ€™re really good and set well when cooking. Make your own flour, itโ€™s literally blended dry quinoa.That simple. Now go try them.

Ingredients

  • 200g quinoa flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 300ml almond milk
  • 4 eggs
  • 15g butter
  • 200g Greek yoghurt
  • 100g blueberries
  • 2 tsp olive oil

Directions

  • To make quinoa flour, simply grind down dry quinoa until flour texture. You can use your nutri bullet, a food processor or even a coffee grinder to do this.
  • Mix the quinoa flour, baking soda, and salt together in a bowl.
  • Stir in the milk, eggs, and butter until you get a smooth, thin batter.
  • In a hot frying pan, add 1 tsp of oil and pour in around 4 tbsp of batter per pancake.
  • Cook until bubbles form on the top and it looks set and then flip and cook until browning on the other side.
  • Continue doing this until all the batter is gone.
  • Add the yogurt and blueberries on top and enjoy.
