Quinoa Pancakes

Ingredients
- 200g quinoa flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 300ml almond milk
- 4 eggs
- 15g butter
- 200g Greek yoghurt
- 100g blueberries
- 2 tsp olive oil
Directions
- To make quinoa flour, simply grind down dry quinoa until flour texture. You can use your nutri bullet, a food processor or even a coffee grinder to do this.
- Mix the quinoa flour, baking soda, and salt together in a bowl.
- Stir in the milk, eggs, and butter until you get a smooth, thin batter.
- In a hot frying pan, add 1 tsp of oil and pour in around 4 tbsp of batter per pancake.
- Cook until bubbles form on the top and it looks set and then flip and cook until browning on the other side.
- Continue doing this until all the batter is gone.
- Add the yogurt and blueberries on top and enjoy.
