Red Pepper and Courgette Frittata
An easy pan made frittata. No faffing with the oven. Bash this together quickly in the morning and enjoy a tasty breakfast.
Ingredients
- 5 medium free range eggs
- 1 tbsp olive oil
- 1/2 large courgette, sliced (175g)
- 1/2 red pepper, cored and diced (100g)
- 8 small cherry tomatoes, halved (100g)
- Bunch fresh parsley, chopped
Directions
- Beat the eggs in a bowl and season with salt and pepper, set aside.
- Warm the oil in a non stick frying pan on medium/high heat and add the courgette and pepper and cook, stirring constantly until soft.
- Turn the heat to medium and add the egg and half the parsley keeping the contents of the pan moving so that the egg mixture coats all of the veg.
- Cook until the bottom and top of the frittata is set.
- Sprinkle over the remaining parsley and turn the heat to low until it’s completely set.
- Loosen the edge and remove from the pan.
- Enjoy! Also works well by adding parmesan.
