Rhubarb Chia Pot
Chia pots are great as they can be made the night before and enjoyed in the morning. They are simple to put together and can also be used as snacks or desserts too.
Ingredients
- 100g rhubarb, chopped
- 200ml unsweetened oat milk
- 25g chia seeds
- 1 tbsp + 1 tsp maple syrup
- 1/4 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp vanilla paste
Directions
- Place the rhubarb in a small pan with 1 tbsp maple syrup and bring to a boil, stirring continuously. Reduce heat to medium/low and let it simmer for 10-15 minutes until stewed.
- In a jug, add the remaining ingredients and mix well. Leave to rest for 5 minutes, then give it another good stir, separating any seeds that have started to clump together.
- Place the rhubarb in a pot/jar/glass, and then pour the chia mix on top.
- Leave to set in the fridge for a minimum of 1 hour.
