Rhubarb Crumble
Rhubarb is great but even greater with some sweetness. Making it into a crumble adds that sweetness and crunch.
Ingredients
- RHUBARB FILLING
- 400g Rhubarb, washed
- Juice from 1 lemon
- 4 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- CRUMBLE
- 100g ground almonds
- 100g oats
- 1 tsp cinnamon
- 3 tbsp coconut oil
- 3 tbsp maple syrup
Directions
- Preheat oven to 200°C.
- Cut the rhubarb into 2cm sized pieces and place in a small pan with the rest of the rhubarb filling ingredients.
- Gently cook for around 5-10 minutes until the rhubarb softens.
- In a bowl, add all the crumble ingredients and rub it all together with your fingertips until mixed well and it crumbles.
- Pop the rhubarb mixture into a baking dish (10×6” size roughly or smaller) and then top with the crumble.
- Bake in the oven for 15 minutes or until golden brown.
