Rhubarb Crumble

Rhubarb is great but even greater with some sweetness. Making it into a crumble adds that sweetness and crunch.


    • 400g Rhubarb, washed
    • Juice from 1 lemon
    • 4 tbsp maple syrup
    • 1/2 tsp cinnamon
    • 1/2 tsp ground ginger
    • 100g ground almonds
    • 100g oats
    • 1 tsp cinnamon
    • 3 tbsp coconut oil
    • 3 tbsp maple syrup


  • Preheat oven to 200°C.
  • Cut the rhubarb into 2cm sized pieces and place in a small pan with the rest of the rhubarb filling ingredients.
  • Gently cook for around 5-10 minutes until the rhubarb softens.
  • In a bowl, add all the crumble ingredients and rub it all together with your fingertips until mixed well and it crumbles.
  • Pop the rhubarb mixture into a baking dish (10×6” size roughly or smaller) and then top with the crumble.
  • Bake in the oven for 15 minutes or until golden brown.
