Rice Pudding with Spiced Pears

You can leave the pears from the recipe if you like and just make the rice. But the baked pears go really well.

Ingredients

  • 2 pears, peeled & halved, middle scooped out
  • 1/2 tsp Chai spice
  • 1 tsp and 40ml maple syrup
  • 1 tbsp boiled water
  • 100g short grain rice
  • 500ml almond milk
  • 1 tbsp vanilla paste
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 star anise
  • Pinch of salt

Directions

  • Preheat oven to 200ยฐC.
  • Get a small baking dish and line with baking paper.
  • Mix together the Chai spice, 1 tsp maple syrup, and 1 tbsp boiled water in a small pot.
  • Pop the pear halves into the dish and pour over the liquid, coating both sides of the pear.
  • Cover with foil and bake in the oven for 15 minutes.
  • Remove the foil, baste the pears with the liquid in the pan, and cook for a further 15 minutes uncovered.
  • Once cooked, remove from the oven and set aside.
  • To make the rice, pop the rice, milk, vanilla, cinnamon, nutmeg, star anise, salt, and 40ml maple syrup in a pan.
  • Bring to the boil, stirring continuously, and then reduce the heat and simmer for 20 minutes or until the rice is cooked.
  • If it goes too thick, you can add more milk at this point.
  • Serve the rice into small bowls and top each with a pear half. Can eat hot or cold.
