Salmon and Mash

Simple dish thatโ€™s great for lunch or dinner. If you want less carbs then take out the potato and double the greens. The lemon goes great with all ingredients in this dish and gives it a great light flavour.

Ingredients

  • 2 wild salmon fillets (110g per fillet)
  • Juice & zest from 1 lemon
  • 2 tbsp thyme leaves, chopped
  • 400g New potatoes
  • 1 tsp olive oil
  • 2 garlic cloves, chopped
  • 6 spring onions
  • 60g kale
  • 100g peas
  • 1 tsp butter

Directions

  • Preheat oven to 200ยฐC.
  • Pop the salmon fillets in a small baking dish and sprinkle over half the lemon zest and juice and half of the thyme leaves. Bake in the oven for 15 minutes or until cooked through.
  • Cut any larger new potatoes in half or quarters and boil in salted water for 15 minutes and drain.
  • In a frying pan, on high heat add the oil, garlic, spring onions and cook for a few minutes.
  • Add the kale and peas and mix until the kale has wilted.
  • Add the rest of the lemon zest, juice, and thyme and mix well.
  • Mash the potatoes with the butter and then add the veg mix and stir it together.
  • Serve the mash onto 2 plates and top each with a salmon fillet. Season with salt and pepper.
