Salmon, Avocado and Eggs
With plenty of healthy fats, these ingredients go great together – a nice and simple breakfast that’s gluten free, dairy free and suitable for those with SIBO.
Ingredients
- 2 medium eggs
- 40g avocado
- 60g wild smoked salmon
- 1 tsp olive oil
Directions
- Place a deep frying pan on the hob and half fill with water, then bring it to a boil.
- Once boiling, crack open the eggs into the water, and keep the heat on medium/high. Cook for 4 minutes, or longer if you prefer a less runny egg.
- Take the avocado out of the skin and cut it into slices.
- Place the smoked salmon on the plate, add the avocado slices on top, and then the eggs.
- Season with salt and pepper and drizzle with oil.
