Satay Chicken Salad

Really simple satay dish and the salad is super quick. Feel free to try this with any nut butters you like. The chunky butters can be better as it adds a crunchy layer.

Ingredients

  • 2 tbsp chunky peanut butter
  • 1 garlic clove, minced
  • 1 tsp curry powder
  • 1 1/2 tbsp tamari sauce
  • 4 tsp lime juice
  • 2 chicken breasts, sliced into strips (260g)
  • 260g courgette, grated
  • 100g carrot, your choice of
  • 70g pepper, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp vinegar
  • 1 tsp honey

Directions

  • Mix the peanut butter, garlic, curry powder, 1 tbsp tamari, and 2 tsp lime juice together in a bowl and mix well.
  • If too thick, add a dash of boiling water until a good consistency to coat the chicken.
  • Add the chicken to the bowl and mix well to coat all pieces.
  • Pop the chicken under a hot grill for 5 minutes on either side or until cooked through.
  • While the chicken cooks, add the courgette, carrot, and pepper to a clean bowl and mix together.
  • In a small pot, mix together the 1โ„2 tbsp tamari sauce, 2 tsp lime juice, olive oil, vinegar, and honey. Mix well.
  • Pour this mix into the vegetable bowl and season with salt and pepper, mixing well.
  • Serve the salad onto 2 plates and top with the satay strips.
