Sausage Shakshuka

Because sometimes you just fancy sausages and this is such a good breakfast incorporating them.


  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 green pepper, cored & chopped
  • 400g gluten-free sausages, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 2 cans peeled plum tomatoes
  • 50g kale
  • 4 medium eggs
  • Freshly chopped parsley for garnish


  • In a large pan/wok, add the oil, onion, and garlic. Cook for a few minutes on high heat.
  • Add the pepper and sausages, and keep stirring until the sausages start to brown.
  • Add the cumin, paprika, turmeric, and pepper. Stir for 1 minute.
  • Add the plum tomatoes, stir, and bring to a boil.
  • Place a lid on and turn down the heat, simmering for 10 minutes.
  • Stir in the kale and make 4 pockets in the mix. Crack an egg into each pocket.
  • Place the lid back on and cook until the eggs are cooked to your liking.
  • Serve and garnish with salt, pepper, and freshly chopped parsley.
