Sausage Shakshuka
Because sometimes you just fancy sausages and this is such a good breakfast incorporating them.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, finely chopped
- 1 green pepper, cored & chopped
- 400g gluten-free sausages, chopped
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- 2 cans peeled plum tomatoes
- 50g kale
- 4 medium eggs
- Freshly chopped parsley for garnish
Directions
- In a large pan/wok, add the oil, onion, and garlic. Cook for a few minutes on high heat.
- Add the pepper and sausages, and keep stirring until the sausages start to brown.
- Add the cumin, paprika, turmeric, and pepper. Stir for 1 minute.
- Add the plum tomatoes, stir, and bring to a boil.
- Place a lid on and turn down the heat, simmering for 10 minutes.
- Stir in the kale and make 4 pockets in the mix. Crack an egg into each pocket.
- Place the lid back on and cook until the eggs are cooked to your liking.
- Serve and garnish with salt, pepper, and freshly chopped parsley.
