Scallops with Apple Salad and Nut Sauce
A great dish, would also work well in smaller portions for starters. Really fresh and the sauce is amazing.
Ingredients
- 80g hazelnuts
- 1.5 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 apple, chopped into small pieces
- Juice from 1/2 lemon
- Large handful mixed salad leaves, washed
- 1 tbsp olive oil
- 6 scallops
Directions
- Place hazelnuts into a dry frying pan on high heat and toast until golden.
- Put 20g to the side and then blitz the rest in a food processor/blender until a paste is formed.
- Add the vinegar, honey, and 40ml water and blend again until smooth.
- Pop the apple, lemon juice, and salad leaves into a bowl and mix well. Serve onto 2 plates.
- Chop the 20g of hazelnuts you put to the side into very small pieces.
- Heat the oil in a frying pan on high heat until hot. Add the scallops and cook for 1-2 minutes on each side or until the top and bottom are nicely golden.
- Roll each scallop in the chopped hazelnuts and serve onto your plates. Drizzle the dressing over.
