Scrambled Tofu

A great vegan breakfast bringing a bit more protein. Try with a range of your favourite vegetables.

Ingredients

  • 300g tofu
  • 1 tsp olive oil
  • 1/2 small onion, chopped
  • 120g red pepper, chopped
  • 80g mushrooms, chopped
  • 1 tsp cumin
  • 1 tsp turmeric
  • Tabasco sauce (to taste), optional
  • 4 spring onions, chopped

Directions

  • Chop the tofu block in half. Get some kitchen roll and wrap it around each half and then squeeze with your hands, each half, to get as much moisture out as you can. Then crumble into a bowl and set aside.
  • Heat the oil in a frying pan and add the onion. Cook on high heat for a few minutes and then add the pepper and mushrooms. Cook for another 6 minutes or until the veg starts to soften, or brown at the edges. Turn the heat down a little bit and add the cumin, turmeric, tofu and tobasco sauce if using. Season with salt and pepper. Mix well for another few minutes until all spices are mixed in well and the tofu is hot.
  • Serve onto 2 plates and sprinkle over the spring onion.
