Simple Veg Stirfry
Super simple. Rice noodles are great in these kind of dishes. They take minutes to cook and add the texture you need.
Ingredients
- 90g rice noodles
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 80g carrot, grated
- 80g red pepper, sliced
- 200g courgette, grated
- 100g peas
- 1 tbsp sesame seeds
- 1 tbsp tahini
- 1 tsp white miso paste
- Juice from 1/2 lime
- 2 tbsp fresh coriander
Directions
- Cook the noodles according to the instructions on the packet, set aside.
- In a wok, add the oil and garlic and cook for a few minutes on high heat.
- Add the carrot, pepper, courgette, peas, and sesame seeds and cook for 3-5 minutes until the vegetables start to soften.
- Mix the tahini, miso paste, and lime juice together and then add into your stir fry along with the rice noodles.
- Stir well and serve up, sprinkling fresh coriander on top.
