Smashed avocado and Edamame on Rye
A tasty breakfast with a higher protein content. Try using sauerkraut too instead of kimchi.
Ingredients
- 30g tahini
- 350g edamame beans (can use frozen and defrost)
- 1/2 avocado (70g)
- 1 green chilli, chopped
- 1 tbsp fresh coriander
- Juice and zest of 1 lime
Directions
Pop the tahini, edamame beans, avocado, chilli, coriander, lime zest and juice into a blender and pulse blend until combined, not smooth. Just mixed and still lumpy.
Toast the bread. Pop on your mixture on the top and then spread over the kimchi and sprinkle on the pumpkin seeds.
