Smoked Salmon Rice Bowl

This is actually really simple to make, but buying pre cooked rice would speed this recipe up.


  • 110g brown rice
  • 1 tbsp olive oil
  • 100g mushrooms, sliced
  • 1 clove garlic, finely chopped
  • 200g spinach
  • 60g wild smoked salmon, sliced
  • 2 eggs
  • 2 tbsp mayo/salad cream
  • 1 tsp lemon juice
  • 1/2 tsp paprika
  • 1 tbsp chopped parsley


  • Boil the rice in salted water for 30 minutes or until soft. Drain.
  • In a frying pan, add the oil and fry the mushrooms and garlic on high heat until softened.
  • Add the spinach and stir until it is all wilted.
  • Cook the eggs in a pan of boiling water for 4 minutes (1 minute longer for large eggs).
  • Mix the mayo, lemon juice, and paprika together.
  • Pop the spinach and mushrooms in with the rice and mix around. Serve into 2 bowls.
  • Top each with smoked salmon and an egg and garnish with parsley.
