Smoked Salmon Rice Bowl
This is actually really simple to make, but buying pre cooked rice would speed this recipe up.
Ingredients
- 110g brown rice
- 1 tbsp olive oil
- 100g mushrooms, sliced
- 1 clove garlic, finely chopped
- 200g spinach
- 60g wild smoked salmon, sliced
- 2 eggs
- 2 tbsp mayo/salad cream
- 1 tsp lemon juice
- 1/2 tsp paprika
- 1 tbsp chopped parsley
Directions
- Boil the rice in salted water for 30 minutes or until soft. Drain.
- In a frying pan, add the oil and fry the mushrooms and garlic on high heat until softened.
- Add the spinach and stir until it is all wilted.
- Cook the eggs in a pan of boiling water for 4 minutes (1 minute longer for large eggs).
- Mix the mayo, lemon juice, and paprika together.
- Pop the spinach and mushrooms in with the rice and mix around. Serve into 2 bowls.
- Top each with smoked salmon and an egg and garnish with parsley.
