Smoked Salmon Salad
A tasty low carb lunch option with lots of flavour. Works well with other fish. The lime and tangy sauce really pulls the dish together and gives a great punchy, smoked salmon flavour.
Ingredients
- 1 garlic clove, finely chopped
- Juice from half a lime
- 1 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 2 tbsp sesame oil
- 2 tbsp sesame seeds
- 120g red bell pepper, sliced
- 300g cucumber, hit with a rolling pin, and then chopped
- 40g rocket
- 160g wild smoked salmon, sliced
- 1 tbsp fresh coriander, chopped
Directions
- In a large bowl, add the garlic, lime juice, fish sauce, rice wine, sesame oil, sesame seeds, and season with salt and pepper and mix well.
- Add to the bowl the red pepper, cucumber, and rocket and mix well.
- Serve onto 2 plates and top with slices of the salmon.
