Smoked Salmon Salad

A tasty low carb lunch option with lots of flavour. Works well with other fish. The lime and tangy sauce really pulls the dish together and gives a great punchy, smoked salmon flavour.

Ingredients

  • 1 garlic clove, finely chopped
  • Juice from half a lime
  • 1 tbsp fish sauce
  • 1 tbsp rice wine vinegar
  • 2 tbsp sesame oil
  • 2 tbsp sesame seeds
  • 120g red bell pepper, sliced
  • 300g cucumber, hit with a rolling pin, and then chopped
  • 40g rocket
  • 160g wild smoked salmon, sliced
  • 1 tbsp fresh coriander, chopped

Directions

  • In a large bowl, add the garlic, lime juice, fish sauce, rice wine, sesame oil, sesame seeds, and season with salt and pepper and mix well.
  • Add to the bowl the red pepper, cucumber, and rocket and mix well.
  • Serve onto 2 plates and top with slices of the salmon.
