Spinach Muffins
A fun little recipe to try utilising spinach into something sweet. You can make bigger ones using larger muffin trays.
Ingredients
- 1 ripe banana
- 90ml water
- 50g almond butter
- 1 egg
- 80g maple syrup
- 80g spinach
- 120g oats
- 1/4 tsp bicarbonate of soda
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of salt
Directions
- Preheat the oven to 180°C.
- Grease a mini muffin tin.
- Blend all ingredients together until smooth.
- Pour the batter (around 2 tbsp) into each tin, until all batter is used up.
- Bake in the oven for around 15 minutes until the edges are golden.
- Leave to cool on a cooling rack.
