Spinach Muffins

A fun little recipe to try utilising spinach into something sweet. You can make bigger ones using larger muffin trays.

Ingredients

  • 1 ripe banana
  • 90ml water
  • 50g almond butter
  • 1 egg
  • 80g maple syrup
  • 80g spinach
  • 120g oats
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt

Directions

  • Preheat the oven to 180°C.
  • Grease a mini muffin tin.
  • Blend all ingredients together until smooth.
  • Pour the batter (around 2 tbsp) into each tin, until all batter is used up.
  • Bake in the oven for around 15 minutes until the edges are golden.
  • Leave to cool on a cooling rack.
