Spinach, Sweet Potato & Lentil Dhal
Great to have either as a main or as a side. It’s simple to make and goes well with any green veg.
Ingredients
- 1 tbsp olive oil
- 1 red onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp finely chopped fresh ginger
- 2 small green chillies, seeds removed, finely chopped
- 1 1/2 tsp turmeric
- 1 1/2 tsp cumin
- 1 1/2 tsp coriander
- 300g sweet potato, peeled and chopped
- 250g red split lentils
- 600ml vegetable stock
- 100g spinach
- 4 spring onions, chopped
Directions
- Add the oil, onion, garlic, ginger, and chilli to a large saucepan and stir on high heat for a few minutes.
- Add the turmeric, cumin, coriander, and sweet potato and mix until the potato is coated well.
- Add the lentils and stock. Stir well.
- Bring to the boil, then reduce the heat, pop a lid on the pan, and simmer for 20 minutes, or until the lentils are tender and the potato is still firm.
- Season accordingly with salt and pepper and stir in the spinach.
- Stir until the spinach has wilted and then serve.
- Sprinkle the spring onions on the top.
