Spinach, Sweet Potato & Lentil Dhal

Great to have either as a main or as a side. It’s simple to make and goes well with any green veg.

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tbsp finely chopped fresh ginger
  • 2 small green chillies, seeds removed, finely chopped
  • 1 1/2 tsp turmeric
  • 1 1/2 tsp cumin
  • 1 1/2 tsp coriander
  • 300g sweet potato, peeled and chopped
  • 250g red split lentils
  • 600ml vegetable stock
  • 100g spinach
  • 4 spring onions, chopped

Directions

  • Add the oil, onion, garlic, ginger, and chilli to a large saucepan and stir on high heat for a few minutes.
  • Add the turmeric, cumin, coriander, and sweet potato and mix until the potato is coated well.
  • Add the lentils and stock. Stir well.
  • Bring to the boil, then reduce the heat, pop a lid on the pan, and simmer for 20 minutes, or until the lentils are tender and the potato is still firm.
  • Season accordingly with salt and pepper and stir in the spinach.
  • Stir until the spinach has wilted and then serve.
  • Sprinkle the spring onions on the top.
