Spring Fish Pie
You can use any white fish in this dish. You can’t beat a good pie and this one is super simple.
Ingredients
- 750g new potatoes
- 300g spinach
- 150g spring greens, chopped
- 4 eggs
- 520g cod fillet, chopped into large chunks
- 200g coconut yoghurt
- Small bunch fresh parsley
- Juice from 1/2 lemon
- 1 tbsp olive oil
Directions
- Preheat oven to 200°C.
- Boil the new potatoes in a pan of salted boiling water for 15 minutes or until a knife easily slides through the middle. Drain and pop back into the pan and give them a rough mashing.
- Pop the spinach and spring greens in a bowl and pour boiling water over them. Leave for 1 minute and then drain.
- Using a small roasting dish (around 12”), place the wilted spinach and spring greens across the bottom to create a layer and season with salt and pepper.
- Make 4 pockets evenly spaced apart in this layer and crack an egg into each.
- Next, layer the cod on top and then pour the coconut yoghurt evenly over.
- Sprinkle the parsley on next and drizzle over the lemon juice.
- Place the mashed potato on top and evenly spread and season with salt and pepper, and drizzle the olive oil over the top.
- Bake in the oven for 30-45 minutes or until the cod is cooked through.
