Stir Fried Beef & Broccoli with Pepper Rice

Simple yet effective. The sweet pepper rice is amazing and great with any Thai style dish you might make. If youโ€™re looking for a higher carb recipe then try this one out.

Ingredients

  • 1 Romano pepper, stems and core removed, thinly sliced
  • 2 tbsp mirin
  • 120g white rice
  • 1 head broccoli (florets)
  • 1 tsp olive oil
  • 250g grass-fed beef steak, thinly sliced
  • 1 inch piece fresh ginger, peeled & finely chopped
  • 3 tbsp tamari sauce

Directions

  • Place the peppers in a bowl and mix in the mirin. Season with salt and pepper. Set aside to marinate, stirring occasionally for around 10 minutes.
  • Pop the rice and 1 cup of salty water into a pan and bring to the boil. Once boiling, reduce the heat to low and place on a lid, and cook for around 14 minutes (or until tender), making sure the rice doesnโ€™t stick to the bottom.
  • Once cooked, remove it from the heat and fluff the rice with a fork. Stir in the peppers and any juice and season with salt and pepper.
  • While the rice is cooking, place the broccoli into a frying pan on high heat and toast for 7-8 minutes or until lightly browned and softened. Set aside.
  • In the same empty pan, heat the oil on high and add the steak. Cook in one layer for 2 minutes and then flip.
  • Add the ginger, tamari sauce, cooked broccoli, and 2 tbsp water and continue cooking for a few more minutes.
  • Divide the pepper rice between 2 dishes and then top each with the cooked beef and broccoli.
